Milkbar Lactation Cookie Recipe

Motherhood is a journey filled with love, joy, and, of course, its unique challenges. One such challenge many mums face is maintaining a robust milk supply while juggling the demands of daily life.

Enter Milkbar Lactation Cookies – a delightful treat crafted with love and purpose to support breastfeeding mums in their nourishing journey. Follow along as we share the secrets to creating these scrumptious cookies that not only taste heavenly but also contribute to a healthy lactation experience.

Ingredients:

  • 120g butter, softened
  • 100g white sugar
  • 100g soft brown sugar
  • 1 tbsp ground flaxseed/linseed
  • 1 egg
  • 1 tsp vanilla extract
  • 150g plain flour
  • ½ tsp baking soda
  • 1 tbsp brewer's yeast
  • ½ tsp salt
  • ⅔ cup whole oats
  • ⅓ cup quick oats
  • 100g Whittakers 50% dark chocolate, chopped

Method:

  1. Preheat and Caramelize: Preheat your oven to 180°C (350°F). In a small saucepan, melt the butter over medium heat. Allow it to heat until the butter is melted and the milk solids begin to caramelize, approximately 4 minutes. Keep a close eye on it, stirring regularly to prevent the milk solids from burning. Once caramelized, the butter will emit a delightful nutty aroma. Set the caramelized butter aside to cool for 10 minutes.

  2. Flaxseed Infusion: In a small bowl, combine the ground flaxseed/linseed with water, allowing it to sit for 5 minutes. This creates a flaxseed mixture that will contribute to the texture and nutritional profile of your lactation cookies.

  3. Prepare Dry Ingredients: In another bowl, sift together the flour, baking soda, brewer's yeast, and salt. Set this dry ingredient mixture aside, ready to be combined with the wet ingredients.

  4. Whisk and Combine: To the cooled caramelized butter, add the white sugar, soft brown sugar, egg, vanilla extract, and the flaxseed/linseed mixture. Whisk these ingredients together until well combined, creating a luscious and flavorful base for your cookies.

  5. Merge Wet and Dry: Integrate the butter mixture into the bowl of dry ingredients. Mix thoroughly, ensuring the wet and dry components come together harmoniously, forming a cohesive cookie dough.

  6. Oats and Chocolate Bliss: Add the whole oats and roughly chopped Whittakers 50% dark chocolate to the dough. Stir gently to distribute these delightful elements evenly, promising bursts of flavor and texture in every bite.

  7. Scoop and Arrange: Using a large tablespoon, scoop portions of cookie dough onto a baking tray, leaving ample space between each ball. Resist the urge to flatten the cookie balls, as they will naturally spread during the baking process.

  8. Bake to Golden Perfection: Place the baking tray into the preheated oven and bake for 10-12 minutes or until the edges of the cookies turn golden brown. This ensures the ideal balance of softness and crunch in your lactation cookies.

  9. Cool and Indulge: Once baked to perfection, transfer the cookies to a wire rack to cool completely.
